Hunger strikes, passive refusal to obey, &c. work by shaming an oppressor or making the situation untenable, but neither of those is quick; so non-violence isn't a defence against the personal harm that can—and does—occur if an oppressor is immoral enough to consider slavery/invasion acceptable.
